Cookbook Countdown #12 ~ Macadamia-crusted chicken strips with mango salsa

For this month, you may use those cookbooks which you have shared at Cookbook Countdown, from January 2016 onwards. So, in December : You may select a new chosen cookbook to cook or bake from as usual, OR you may re-visit all the cookbooks that you have used at Cookbook Countdown from January to November 2016. There might be a recipe or two that you've been eyeing to try, from some of those books from the months before. December is the time to share them. Let's browse thru those books again! Or cook from a new book, the choice is yours!

Macadamia-crusted chicken strips with mango salsa

chicken tenderloins (breast fillets - cut into strips)
enough APL - seasoned with salt and pepper - for coating
1 egg - beaten
handful of macadamias, toasted and finely chopped
fresh breadcrumbs (to be mixed with chopped macadamia nuts)
oil for frying

1 small mango, diced into small cubes
diced half red onion
chopped coriander leaves
half green chilli (red would have been better!) -
seeded and finely copped
juice of one lime
salt and pepper to taste (I skipped)

Hi Emily,
This yummy macadamia nuts coated fried chicken tenders attracted me here. I'm sure it's a perfect pairing with tangy sweet mango salsa ^-^!

I already like the name of macadamia crusted! Must be very nutty "hiong" and delicious! The mango looks good too, I could finish the whole bowl of it!
